Our Story
Food has the power to reach areas and take us back to life experiences like nothing else can. I remember rainy days sitting by the fire, watching my grandmother Rosa make “pellizcadas” (thick corn tortillas that are literally pinched around the edges hence the the name, “pellizcar” means to pinch). The aroma of roasted peanuts and “café de holla” take me back to our small town in Mexico, and chilly rainy season days. Food is more than just something that fills our stomachs it fills our souls, it connects us as people and cultures. My desire is to share the richness of authentic Mexican food, specifically food from central Mexico.
Tlaxcalli (Tlah-sh-ka-lee)is the Nahuatl(native dialect of our region in Mexico) word for tortilla. Corn is an integral part of the Mexican diet and the base to almost all of the items on our menu. Corn was to the native Mexican people what a blank canvas is to an artist. Native Mexican people were able to create delicious food from what surrounded them, things like wild mushrooms, avocados, peppers, tomatillos, plants and animals. Just like the Native Americans they were resourceful and used all parts of the animals, nothing was wasted. This resourcefulness leads to dishes like menudo, beef tongue tacos and many others that can be mentioned. They were also able to incorporate new things brought to Mexico by the Spanish, the French and even the Lebanese.
People deserve real Mexican food and it is our goal to deliver such food.
Taqueria Tlaxcali is born from the desire to make good Mexican food for all people to enjoy.
